		<description>Since I live (and cook!) in England grillades are not something normally on the menu and even the distinction between Cajun and Creole new. Your adaption of the John Besh recipes sounds quite delicious though and I certainly will try it.</description>

		<description>Truly, one of the great advantages to growing up in our own culture stuck between Cajun and Creole, what we lovingly call coon ass, was being able to know and understand all the best aspects of both.  I&#039;m with David.  I grew up knowing the Creole version on top of grits....wow, my mouth is watering.  But, I&#039;ve even seen them battered fried like venison backstrap.  All great in my eyes.</description>

My grillades experience was opposite of yours... I had the Creole version first.  I was introduced to the Cajun version by my wife&#039;s family who is from down the bayou.  I have to admit, I think I like their version better.  Especially on a fall day at the camp.</description>
