The Authors

coon1 150x150 The Authors Coon: Qualifications: Has eaten at least three meals per day for over 28 years.
Capt. Butler: In college, he left his bartender/grill cook job at the pub to make drinks at a trendy restaurant because he could eat at half price!
j and n 0731 150x150 The Authors JB: Foodie, home chef, beer junkie, home brewer. Support your local breweries!!!
mama mia and elleclare 150x150 The Authors Mama Mia and EllClare: Growing up in a large Italian family, we were born into a world of food – heavenly food. There’s a fond memory that stands out about my grandmother’s house (Mamma Mia’s mother) – spaghetti and sweet tomato and basil sauce, always followed by homemade delicious cake (from scratch of course)! My grandmother baked cakes for locals since the beginning of time; I suppose this is where my passion for baking comes from!

Most gatherings begin with, “OK, where do yall want to eat?”, or “What are we cooking?” Mamma Mia and I love to try new dishes in our own kitchens, but love trying out others’ famous dishes even more.

nick pick 150x150 The Authors Nick: My first year out of college, I had a job working as a claims adjuster…. one year and one near-nervous breakdown later, I stormed out of the insurance business for good. Without a job or any clear direction, I found my way to New Orleans to wait tables at Palace Cafe’. After practically begging the powers that be, I scored internship with the marketing department for Dickie Brennan’s Palace Cafe, Steakhouse, and Bourbon House. It was there that I fell in love with food and wine, mostly because my job required me to go with chefs to food and wine events. Those days are long gone, but my love of great food (and junk food) remains.
tommypic 150x150 The Authors Tommy: For me, it was between culinary school and law school; I chose the latter. I love the law but writing about food has been a longtime dream of mine and The Cajun Foodie is an outlet where I can release my creative side and skirt the fine line between journalistic pontification and unrepentant rambling soliloquies… who am I kidding, this gives me an excuse to eat great food!
